Don’t Quit Your Daydream

One of the first, and from the brewer’s POV, most exciting parts of our demolition and build out has been to get the drainage sorted.
Over the past few weeks, we’ve been degreasing the floors, planning the drainage and getting them ready to install the trench drains.
While the Reverie Dream Team would love to have at a giant slab of concrete with some larger than life saws, this is one job better left to the pros. But we’re all amazed to see how fast they can work once the cutting starts!
Check out some of the photos from the progress so far. Next steps will be pouring concrete, leveling floors and the oh so wonderful-squeegee-friendly epoxy application. All in preparation of the shiny new equipment that’s floating around the sea somewhere.

Last week we had the pleasure of the local CBS news crew swinging by the brewery to see the initial progress and raise a glass (ok, solo cup) for good luck towards a successful buildout for an opening this fall.

Well, the “royal we” did not have a girl. But the Head Brewer and MOST importantly his talented beautiful wife had a girl.
Welcome Reverie Brewing Company’s first baby!
Penelope but you can call her “Nellie”.
This little line manager is sure to keep us on point as we build out our tap room and supply tasty refreshing beers.
Nobody better to drive your dreams forward than a little cherub sent from heaven.

Watch out walls you’re numbered! Losen up concrete, you’re about to be cut! Find a new lease mice! You’re evicted!!
It’s one thing to have a plan to do something, it’s a whole nother thing to do that thing. And that’s what we’ve been up to.
Masks on, goggles up, that’s the way we like to demo! Saftey first of course. Well… there may have been a few moment we could have been safer. BUT THAT DOESN’T MATTER WHEN YOUR FIRST AID KIT IS THE SIZE OF A TINY CHILD!

Woot woot!! Nothing feels better than hearing the word “Yes”. And we just had that happen twice… so yeah… we’re feeling pretty good right now.
The first yes came from the Newtown Planning and Zoning board. Who has approved us to open a brewery and tasting room at 57B Church Hill Road. So drop a pin and save that address to be ready to toast your friends come opening day.
The second yes came from the TTB. We were all nervous about talking to the federal government. Which is counter to everything we’ve read and heard from other breweries. And boy were they right. The TTB was great and very helpful in getting us through the approval process.
While we’ve been brewing and working on recipes without the approvals we thought it would be fun to celebrate by having a double brew session. Check out the photos below. Being that we’re dreamers we couldn’t just pick two recipes that were similar. So we brewed an East Coast IPA and a Banana Chocolate Stout.
We’re working towards having a wide range of beer options for opening, including a cider. Because it’s really tough to keep on daydreaming when you don’t have the right liquid to inspire you.
Starting construction on the new space so stay tuned for more updates.

Well almost… It’s our dream to own, operate and work at a brewery that has a positive impact on the community around it while serving delicious brews worth daydreaming about.
We’ve been working on this dream for almost a year now and every day it gets closer to a reality. Right now we’re learning about the pain points of zoning, equipment procurement and all this “licensing” stuff you’ve probably heard about from other breweries who have trailblazed ahead of us.
It might not sound like a lot of fun, but when you’re trying to make your dreams come true, you’d be surprised by what starts seeming less like a challenge and more like an opportunity to grow.
We know you’re probably looking for a couple of glory shots of beer, so here’s a few to hold you over for a recent test batch we’re working on. It’s a Carolina BBQ-inspired amber ale. Here’s hoping that it makes a way from our fermentors to a glass in your hand soon.
